A naxian chard pie straight from The Organic Table
Bake your way into the flavors of homemade Greek pies with this delicious pie that Maria, from The Organic Table, was kind enough to share with us… It is a traditional, family recipe and it is so easy to make!

Ingredients for the filling:
2 kilos of chopped chards
1 big onion, grated
1 cup of raisins
2 tablespoons of honey
1 pinch of cinnamon
1 cup of rice
1 tablespoon of chopped dill
1 tablespoon of chopped fennels
¾ of a cup olive oil
Sesame seeds
And for the dough:
About 1 kilo of flour for all purpose
1 tablespoon of lemon juice
1 shot glass of olive oil
Warm water
How to do it like Maria : )
Put the chards in boiling water for 10 minutes, and then drain well. Sauté them in olive oil, add the onion, the rice, and stir well for 4-5 minutes. Remove from the heat. Add the dill, the fennels, the raisins and the honey.
Put the flour in a bowl and add the lemon juice and olive oil, working the flour with the hands until it feels like grains of rice. Then, gradually add the warm water, and knead until the dough becomes soft and smooth. Cover with a towel and leave it to rest for half an hour.
Separate the dough into two parts. Sprinkle some flour on the table and roll out the dough to a larger sheet than the circumference of the pan that you will use to bake the pie. You will need to roll out two sheets, one for the top and one for the bottom of the pie.
Place the first sheet into the baking pan; add the filling and then the cover with the top. Sprinkle with sesame seeds and bake in a preheated oven for about an hour, until golden. Drizzle with honey and serve.
